How do you think and define KPI's

When launching a new product or service how do you define KPI's ? In a example: launching a new type of camper Van's to rent is being distributed to some of our operations locations. Which parameters its important to look into it and to measure the success of our new product?

I do not expect many details since I'm not providing many as well. I just want to know the process to think and define them.
