Developing plans to scale but a bit scared

Bootstrapped for few years now and have been solo. Started out very rough, was a failure first year, started growing the second year and became profitable. Professional service company. Current main customer segment is in the upper end but that would change as we scale. I want to add more technology into the business by using more saas platforms for customer interactions, on boarding, payments, automating redundant tasks, and develop a team overseas. As well, a new website for easy sign up. Pretty simple except for the overseas team but working on that.

I love helping people but want to get away from hourly billing to a package based service to be able to scale the company. Similar to what many saas companies are doing. The packages would be profitable for the company with new technology in place. Since the beginning, word of mouth have been the main source of new customers.

To be able to scale, I'll have to hire a sales/marketing person and someone with experience in the field to manage the new customer base with questions and review process. Even hiring just one person to manage sales and customer side would be fine in the beginning. This is where I am scared and hesitant. I don't want to hire someone and have this be a total failure and I am not able to pay the person. I don't want someone to go through rough times, get behind on their bills, have family problems, and etc. How should I go about hiring personal?

Many of you have variety of experience and knowledge. Would appreciate your input on this.
