Advice for expanding food truck to multiple locations!

Hello, I have a fairly successful sno cone stand, and I would like to open another location or two in the area. I think there is enough business to sustain them, but I'm a little worried about how to go about doing a GREAT job managing them all.

We operate in the summer and typically higher teenagers who have the summer (mostly) free. I'm worried about many issues, like hiring enough quality employees and training them properly. There are always fires that need to be put out, and weird gaps in the schedule for kids going on family vacation and the like, which I have usually been able to be accommodating and to fill in myself when it's bad, without much issue.

Do you have any advice for how to make this transition? It's a largely cash business so I have been able to oversee the one location without much issue of employees taking liberties with the till, but I wonder if that would be more difficult to manage with more locations. I can do a lot of the back end work with supplies, equipment, putting out fires, etc., but I worry about being spread thin. What kind of heirarchy is typical in this situation? Managers would be nice to help run stands but I'm not sure how much I can ask of an 18 or 19 year old employee in that department, especially when it comes to motivating the other kids to work clean and efficiently.
